The days are getting longer, the weather is getting warmer (it’s in 80s today in Philly – what?!), the flowers are blooming (ah-choo!).  Spring has arrived!

It’s the season of brunches: Easter, bridal showers, spring tea parties, Mother’s Day.

Back in December, I shared a post for Peppermint Mocha Bundt Cake.  It featured International Delight® Creamer as a great way to add flavor to baked goods.

I’ve teamed up with International Delight® again, but this time with a springy twist.  Spring flavors shine in these French Vanilla Lemon Blueberry Scones!

What pairs better with a cup of coffee than a delicious, freshly baked scone?  Pretty sure the answer is nothing.

The French Vanilla flavor is the perfect scone base.  It’s delicious as is, but it’s ready for the mix-ins of your choice.

The possibilities are endless, but I’d recommend lemon and blueberry – such a classic spring combination!  Big, fresh blueberries, fresh lemon zest (I used the last of the season’s meyer lemons!), and don’t forget the big sugar crystals on top!

I stopped by my local Walmart and picked up two half-gallon International Delight® Coffee Creamers in the French Vanilla and Cold Stone Creamery™ Sweet Cream flavors.  We do a lot of entertaining and I want to be prepared to offer all our spring guests a delicious cup of coffee!

Most home-baked scone recipes call for either a scone pan or forming the scone into a ball and cutting into 8 wedges.  You can absolutely do that here, but I prefer the look of individual scones.

I like the round shape and, confession, I find it’s easier to bring them to friends without them knowing you stopped to eat one first. ? Bringing 7 scones that make up 7/8th of a circle?  Busted!  Bringing 11 scones instead of 12?  That was just the amount of dough and the size of your scoops!

French Vanilla Lemon Blueberry Scones

Sweet and creamy and packed full of fresh blueberries and lemon zest, French Vanilla Lemon Blueberry Scones are the perfect addition to spring and summer brunches.

Ingredients:

  • 2 3/4 cups all purpose flour
  • 1/2 cup sugar
  • 3/4 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup (1 stick) butter, frozen
  • zest of 1 medium lemon (~1 tablespoon)
  • 1 cup blueberries
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3/4 cup International Delight® French Vanilla Creamer
  • coarse sugar crystals, for decorating

Directions:

  1. Preheat oven to 375° F.  Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.  Remove the butter from the freezer and grate into the bowl, using the large sides on a box grater.  Using your fingers, mix the butter into the flour mixture until sandy and crumbly; some larger pieces of butter will remain.  (Alternatively, cut cold butter into the flour with two knives).   Stir in the lemon zest and blueberries.
  3. Whisk together the eggs, vanilla extract, and International Delight® French Vanilla Creamer.  Make a well in the center of the dry ingredients and pour in the liquid ingredients.  Stir gently until the mixture is sticky and holds together.
  4. Use a muffin or ice cream scoop to scoop ~1/3 cup of batter into mounds on the prepared baking sheet.  Top with coarse sugar cookies.  Bake for 30 minutes, until lightly browned.  Remove from the oven and rest for 5 minutes on the baking sheet.  Best enjoyed while still warm.
