It’s day two of Tomato Week here on Bunsen Burner Bakery!  In case you missed it, I’m doing an entire week dedicated to tomato recipes, to help you use up that end-of-season bumper crop.

Today, we’re featuring a corn and tomato crab salad (and avocado, too – but corn, avocado, and tomato crab salad is a mouthful).

I’ve mentioned before that I am very pro-imitation crab.  It’s easier to find and much more affordable.  But if you have access to fresh lump crab without breaking the bank, this would be even better!

This salad is quick to throw together (only 10 minutes!!) and adapts well to whatever ingredients you have on hand, so it’s a perfect weeknight meal.

Just add a little bit of Greek yogurt to add a nice tang, a little spiciness from the jalapeno peppers, and the delicious summer combination of corn, tomato, and avocado.

You’ll notice that all the creaminess of this crab salad comes from Greek yogurt.  If you love mayo, you can absolute swap it out.

I like mayo more than a Northerner probably should, but I love using Greek yogurt instead for the extra protein and lower fat content.  It’s such a great swap to lighten up summer salads!

This crab salad should be consumed fresh, as is always the case with seafood.  It was delicious on the first day, okay on day two, and fairly unappetizing by the third day.

The juice from the tomatoes makes everything a little soupy the longer it sits, and it’s never worth taking the risk of food poisoning from three day old crab!

While we made this for a quick and easy weeknight dinner, this corn salad would also make an excellent side for a picnic or BBQ.  By the end of summer, you’re starting to get sick of potato salad and coleslaw, right?

(No? Just me? I feel like in May, grilled burgers and potato salad are all the rage, and by the end of summer, it’s just.. meh, this again?)

Shake things up a little and bring this corn and tomato crab salad along for your group event, instead.  Equally at home on the dinner table or as a summer side!

Corn Tomato Crab Salad

Shake up your summer side rut with an easy corn and tomato crab salad.  A great way to highlight fresh summer tomatoes and corn, and comes together in only 10 minutes!

Ingredients:

  • 12 ounces fresh or imitation crab
  • 2 large tomatoes, chopped
  • 1 avocado, diced
  • 2 jalapeno peppers, seeded and diced
  • 1 1/2 cups corn
  • 1/4 cup Greek yogurt
  • 2 limes, juiced
  • 2 tablespoons basil, chopped
  • salt and pepper, to taste

Directions:

In a large bowl, combine the crab, tomatoes, avocado, jalapenos, and corn.  Stir together the Greek yogurt and lime juice, adding salt and pepper to taste.  Gently stir the yogurt mixture into the rest of the salad and top with the chopped basil.
