Neapolitan Cupcakes

These Neapolitan Cupcakes combine rich chocolate cake, classic vanilla cake, and fresh strawberry buttercream in one cupcake. With two layers of cake, bits of melted chocolate, and real strawberries in the frosting, they have all three classic Neapolitan flavors without requiring three separate batters.

Neapolitan desserts are built around a very simple idea: why pick one flavor when you can have all three?

I’ve already used the same chocolate-vanilla-strawberry trio in my Neapolitan Bundt Cake, and it works just as well in cupcake form.

These cupcakes start with chocolate cake on the bottom and vanilla cake on top, with chopped semisweet chocolate in between. The chocolate melts as the cupcakes bake, leaving little pockets of chocolate right where the two layers meet.

A big swirl of strawberry buttercream finishes them off, made with reduced strawberry purée for plenty of real strawberry flavor without making the frosting too soft.

And even with three flavors going on, the recipe stays pretty simple. You make one vanilla batter, turn part of it into chocolate, layer the two, and use the strawberry buttercream to finish the job.

What makes these especially fun to eat is that every bite is a little different. Sometimes you get more chocolate cake, sometimes more vanilla, and sometimes you hit one of those melted pieces of semisweet chocolate in the middle. The strawberry buttercream adds a fresh berry flavor on top, so by the time you get through the frosting and both cake layers, you have all three Neapolitan flavors in the same bite.

Ingredients and Substitutions

Pictured below are all the ingredients used to make these Neapolitan cupcakes. Most of the ingredients here are standard cupcake basics, but a few are worth talking about before you start.

Buttermilk

Buttermilk keeps the cupcakes tender and adds just enough acidity to balance the sweetness. If you do not have any on hand, you can use 2/3 cup milk mixed with 2 teaspoons of lemon juice or white vinegar. Let it sit for 5 to 10 minutes before adding it to the batter.

Cocoa Powder

Use unsweetened natural cocoa powder here. It gets whisked with hot water before adding it to part of the vanilla batter, which helps deepen the chocolate flavor without requiring a completely separate chocolate cupcake recipe.

Semisweet Chocolate

The chopped chocolate goes between the chocolate and vanilla layers, where it melts into little pockets as the cupcakes bake. You can use chocolate chips in a pinch, but chopped chocolate melts a little more smoothly.

Strawberry Purée

Fresh strawberries give the frosting both its flavor and its color. The purée is reduced before it’s added to the buttercream, which concentrates the strawberry flavor and cooks off some of the extra water.

How to Make Neapolitan Cupcakes

The easiest way to make these is to start with one vanilla cupcake batter, then turn part of it into chocolate.

Make the Vanilla Batter

Beat the butter and sugar until light and fluffy, then add the eggs and vanilla. Add the dry ingredients and buttermilk in alternating additions, mixing just until everything comes together.

Make the Chocolate Batter

Whisk the cocoa powder with hot water until smooth, then stir in 1 cup of the vanilla batter.

Layer the Cupcakes

Divide the chocolate batter among the cupcake liners first. Sprinkle chopped semisweet chocolate over the top, then add the remaining vanilla batter. Bake until the tops are lightly browned and a toothpick comes out with just a few crumbs.

Make the Strawberry Buttercream

While the cupcakes cool, reduce the strawberry purée slightly to concentrate the flavor and remove some of the extra water. Once the reduction is completely cool, beat it with the butter and vanilla, then add the powdered sugar and beat until the frosting is smooth and fluffy. Pipe or spread the buttercream over completely cooled cupcakes.

Blooming Cocoa Makes a Better Chocolate Layer

Since the chocolate batter starts with the same vanilla batter, we need the cocoa powder to add a very pronounced chocolate flavor while adding minimal ingredients.

Kitchen Chemistry

Cocoa powder contains fat-soluble and volatile flavor compounds that become easier to release when the cocoa is bloomed by mixing with hot liquid. The heat also helps hydrate the starches and proteins in the cocoa, which reduces clumping and lets the chocolate flavor disperse more evenly through the batter.

Because only part of the vanilla batter becomes chocolate batter, blooming the cocoa first gives that smaller portion a more pronounced chocolate flavor without requiring a completely separate chocolate cupcake recipe.

Frequently Asked Questions

Can I make these cupcakes ahead of time?

The cupcakes can be baked a day ahead and stored in an airtight container at room temperature. You can also make the strawberry buttercream ahead and refrigerate it separately, then bring it back to room temperature and beat it briefly before frosting.

Can I use frozen strawberries for the frosting?

Yes. Thaw them first, drain off any excess liquid, then purée and reduce them the same way you would fresh strawberries.

Why does my strawberry buttercream look curdled?

The butter and strawberry reduction do not always come together smoothly at first, especially if they are at different temperatures. Keep beating, then add the powdered sugar. The frosting should smooth out as everything mixes together.

Can I freeze Neapolitan Cupcakes?

Yes. For the best texture, freeze the cupcakes without frosting in an airtight container for up to 2 months. Thaw them at room temperature, then add the strawberry buttercream before serving. Already frosted cupcakes should be thawed in the refrigerator.

Ingredients

For the Cupcakes

  • 1 1/2 cups (180 grams) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon table salt
  • 1/2 cup (113 grams) unsalted butter, room temperature
  • 1 cup (198 grams) granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2/3 cup (160 grams) buttermilk, room temperature
  • 1/4 cup (21 grams) natural unsweetened cocoa powder
  • 1/4 cup (60 grams) hot water
  • 2 ounces (57 g) semisweet chocolate, finely chopped

For the Strawberry Buttercream

  • 1/3 cup (80 grams) strawberry purée, to reduce to 1/4 cup
  • 1 cup (226 grams) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups (397 grams) powdered sugar
  • Pinch of salt

Instructions

  1. Prepare the pan. Preheat the oven to 350°F. Line a standard 12-cup muffin pan with cupcake liners.
  2. Make the vanilla cupcake batter. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and granulated sugar on medium-high speed for 2 to 3 minutes, until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until combined. Scrape down the sides and bottom of the bowl as necessary. With the mixer on low speed, add one-third of the flour mixture. Add half of the buttermilk, followed by another third of the flour mixture. Add the remaining buttermilk, then finish with the remaining flour. Mix just until combined.
  3. Make the chocolate batter. In a separate medium bowl, whisk the cocoa powder and hot water together until smooth. Add 1 cup of the vanilla cupcake batter and stir until evenly combined.
  4. Layer the cupcakes. Divide the chocolate batter evenly among the 12 cupcake liners. Sprinkle the chopped chocolate evenly over the chocolate batter. Divide the remaining vanilla batter evenly over the top. The liners should be approximately four-fifths full.
  5. Bake. Bake for 20 to 22 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the center comes out with only a few moist crumbs. Cool the cupcakes in the pan for 5 minutes, then transfer them to a wire rack to cool completely before frosting.
  6. Reduce the strawberry purée. While the cupcakes cool, add 1/3 cup strawberry purée to a small saucepan. Cook over medium-low heat, stirring frequently, until reduced to 1/4 cup. Transfer the reduced purée to a small bowl and cool completely before making the frosting.
  7. Make the strawberry buttercream. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, cooled strawberry reduction, and vanilla extract on medium speed until combined. The mixture may initially look slightly separated. Add the powdered sugar and salt. Mix on low speed until incorporated, then increase the mixer to medium-high speed and beat for 1 to 2 minutes, until smooth and fluffy.
  8. Frost the cupcakes. Pipe or spread the strawberry buttercream over the completely cooled cupcakes.

Notes

  1. Strawberry purée: Purée fresh strawberries until smooth. You will need approximately 5 to 6 medium strawberries to make enough purée. Reducing the strawberry purée concentrates the strawberry flavor while removing some of the water that can make buttercream too soft.
  2. Buttermilk: Cultured buttermilk gives the cupcakes the best texture. If necessary, combine 2/3 cup milk with 2 teaspoons lemon juice or white vinegar and let it stand for 5 to 10 minutes before using.
  3. Blooming the cocoa: Whisking cocoa powder with hot water helps release its flavor compounds and disperses the cocoa evenly, giving the chocolate portion a deeper, smoother chocolate flavor.
  4. Frosting consistency: Strawberry buttercream is naturally softer than a standard American buttercream. If it becomes too soft to pipe, refrigerate it for 10 to 15 minutes, then beat it briefly again before frosting the cupcakes, adding a few additional tablespoons of powdered sugar if desired.
  5. Storage: Store the cupcakes in an airtight container at cool room temperature for up to 2 days or refrigerate for up to 5 days. Bring refrigerated cupcakes to room temperature before serving so the cake and buttercream can soften.
