Banana pudding is one of those desserts that manages to be both nostalgic and timeless. It’s so easy (we’re using pudding mix here, not making our own custard) but it never fails to draw a crowd.

Somehow, banana pudding feels both fancy and unfussy. You can serve it in a glass trifle dish and it looks like something from a bakery display case, but it’s also just as at home in a simple casserole dish. It’s great for making ahead and can easily be doubled to serve a large group.

This recipe stays close to the traditional elements — pudding, whipped cream, wafers — but the caramelized bananas are the real star. They’re buttery, sweet, and have just the right amount of caramel richness without overpowering the rest of the dessert.

Cooking ripe bananas in butter and brown sugar transforms them into something magical. They develop that rich, toffee-like depth that pairs perfectly with the creamy vanilla pudding and sweet vanilla wafers. Once you caramelize your bananas, you won’t want to go back to the regular way!

If you’ve never caramelized fruit before, don’t worry, it’s surprisingly simple. A skillet, a little butter, brown sugar, and ripe bananas are all you need. The hardest part is not eating them straight out of the pan before you start layering.

Here’s what you’ll need to make this banana pudding, along with some key recipe notes and substitutions listed below.

  • Vanilla Pudding Mix: Instant pudding mix is quick and reliable. You can swap in banana-flavored pudding for a stronger banana taste, or make your own custard from scratch for an extra special treat.
  • Milk: Whole milk yields the creamiest texture, but 2% works too. For dairy-free, use canned coconut milk or an unsweetened almond or oat milk blend that sets well with pudding mix (and make sure the pudding mix is dairy-free, too!).
  • Heavy Cream: For dairy-free, use chilled full-fat coconut cream, whipped until fluffy. Store-bought whipped topping like Cool Whip can be used as a time-saver, although fresh whipped cream is definitely tastier!
  • Butter: For dairy-free, use vegan butter or margarine.
  • Bananas: The bananas should be ripe but still firm – over ripe bananas will fall apart in the caramel.
  • Vanilla Wafers: Nilla wafers are the classic choice. For gluten-free, use a GF vanilla wafer or shortbread cookie. I love the Pepperidge Farm Chessman Butter Cookies as an alternative, or graham crackers also work in a pinch.

  1. Finish and Chill: Top with more cookies. Chill until ready to serve.

Caramelized Bananas for More Flavor

Caramelizing fruit isn’t just about adding sweetness — it’s a chemical transformation. Why does adding sugar and heat result in a totally different flavor? We can answer this with my favorite subject… kitchen chemistry!

Kitchen Chemistry

When bananas are cooked with butter and sugar, the heat triggers both caramelization of the sugar and Maillard browning from the natural sugars and amino acids in the bananas. This creates hundreds of new flavor compounds, giving the bananas a deep, nutty, toffee-like flavor profile.

It’s important not to overcook as too high a heat or too long on the stove will burn the caramel. Medium heat is your friend here, giving you enough time for the chemical reactions to develop flavor without tipping into bitterness.

This same technique works for other fruits, too. Try caramelizing peaches, pineapple, or even apple slices for an equally impressive dessert upgrade. (And any of these would be a delicious twist on banana pudding!)

Tips and Tricks for the Best Caramelized Banana Pudding

  1. Firm Bananas: Use ripe bananas with no green but a still firm texture so they don’t fall apart while cooking.
  2. Watch the Caramel: Keep the heat at medium to avoid burning.
  3. Make ahead: Assemble up to 24 hours in advance for the flavors to meld.
  4. Boost Banana Flavor: Use banana pudding mix instead of vanilla for extra banana punch.
  5. Add Fresh Bananas: For additional flavor and texture, add one sliced fresh banana with the caramelized banana layer.
  6. Extra Crunch: Crumble a few cookies over the top immediately before serving.
  7. Storage: Store tightly covered in the fridge and enjoy within 3 days.

Take classic banana pudding up a notch with this Caramelized Banana Pudding. Layers of creamy vanilla pudding, buttery caramelized bananas, fluffy whipped cream, and crisp vanilla wafers make this the ultimate twist on a Southern favorite.

Ingredients

  • 1 (5.1-ounce) package instant vanilla pudding mix
  • 3 cups (681 grams) whole mlik
  • 1 cup (227 grams) heavy cream
  • 4 tablespoons (57 grams) butter
  • 1/4 cup (53 grams) brown sugar
  • 3 large ripe bananas, peeled and sliced (around 400 grams)
  • 40 vanilla wafer cookies, plus extra for topping

Instructions

  1. Make the pudding. In a large bowl, whisk the pudding mix and milk until smooth and no lumps remain. Cover the bowl with plastic wrap and chill for 30 minutes.
  2. Make the whipped cream. Using a mixer or immersion blender with a whisk attachment, beat the heavy cream until stiff peaks form. Cover and refrigerate.
  3. Caramelize the bananas. Melt the butter in a large skillet over medium heat. Add the brown sugar and whisk, continuing to cook until a thin caramel sauce develops. Add the sliced bananas to the pan in a single layer. Cook for 3-4 minutes, then use tongs to flip the banana slices gently. Continue cooking for an additional 3-4 minutes, until the bananas are golden brown and covered in the caramel. Remove from the heat and allow to cool for 5-10 minutes.
  4. Assemble the banana pudding. Spread half of the chilled vanilla pudding in the bottom of a serving dish, such as a casserole dish, trifle dish, or glass bowl. Layer half of the caramelized bananas over the pudding and top with half the wafer cookies. Spread half of the chipped whipped cream over the cookies. Repeat the layering process with the remaining pudding, caramelized bananas, cookies, and whipped cream. Crumble the remaining cookies and sprinkle on top before serving.

Notes

  1. Use ripe but firm bananas for caramelizing.
  2. For fun twists, try using banana or chocolate pudding mixes.
  3. Add an additional sliced fresh banana with the caramelized banana layers for additional flavor and texture.
  4. Crumble the additional cookies over the top immediately before serving to keep them crunchy.
  5. Store the banana pudding tightly covered in the refrigerator for up to 3 days.
