Homemade Frozen Yogurt Bars

Looking for a refreshing make-ahead treat that feels indulgent but is packed with wholesome ingredients? These Homemade Frozen Yogurt Bars are built on a chewy granola base, topped with creamy vanilla Greek yogurt, and finished with juicy blueberries.

We’re always looking for those magical recipes that check all the boxes: simple ingredients, minimal effort, and a result that gets devoured by everyone in the house.

These frozen yogurt bars are a summer staple, and for good reason. With just a handful of ingredients, no oven time, and plenty of room to play with flavors, they’re endlessly adaptable — and ridiculously good.

The base starts with a chewy, slightly crunchy granola layer that sets the foundation for a creamy, tart, lightly sweet yogurt layer. I usually use plain Greek yogurt and sweeten it with a touch of honey or maple syrup. Add fresh fruit on top, press it in, freeze, and slice — that’s it.

What I love most about these is how versatile they are. I started with blueberries and vanilla, but the base recipe works with just about any mix-in you like. Swirl in some strawberry jam, toss on some sliced bananas and chocolate chips, or go tropical with mango and toasted coconut. I’ve listed a bunch of variations at the bottom of this post to get you started.

This is one of those recipes that works just as well as a light dessert or a grab-and-go breakfast bar. You can dress them up with chocolate chips, swirl in jam, or keep it simple with fresh fruit.

However you make them, you’ll want to keep a batch ready in the freezer all summer long!

Ingredients and Substitutions

  • Granola: Use your favorite store-bought or homemade granola. Look for one with clusters and minimal added sugar. Try crushed graham crackers, pretzels, or crisp rice cereal for a different texture. Gluten-free granola keeps this recipe gluten-free.
  • Coconut Oil: Use refined coconut oil for a neutral flavor, or substitute any neutral oil (like avocado oil) or melted butter.
  • Greek Yogurt: Use full-fat for the creamiest bars. Plain yogurt allows you to control the sweetness, but flavored yogurt is a great way to add more flavors. Use a dairy-free yogurt for a vegan option, although the texture may be slightly icier.
  • Honey or Maple Syrup: Agave syrup or a spoonful of jam can be used as alternatives to sweeten the yogurt.
  • Vanilla Extract: Optional, but adds a little more flavor if you use plain yogurt.
  • Fresh Blueberries: Substitute with chopped strawberries, raspberries, or mango.
  • Peanut Butter: Almond butter, cashew butter, or melted chocolate are all equally delicious to drizzle on top.

How to Make Frozen Yogurt Bars

  1. Make the Granola Base: Mix granola with melted butter and press it firmly into the bottom of the pan.
  1. Mix the Yogurt Layer: Stir together the Greek yogurt, honey, and vanilla extract (if using) until smooth.
  1. Spread and Top: Pour the yogurt mixture over the granola and smooth into an even layer. Press the blueberries into the yogurt and drizzle with the peanut butter.

  1. Freeze: Freeze for 3–4 hours, or until completely firm. Use the parchment paper to lift the bars from the pan and slice into bars with a sharp knife.

Creamy Greek Yogurt Texture

Why are we specifically using Greek yogurt for these bars? Greek yogurt is strained to remove whey, which makes it thicker and less watery than regular yogurt, which is key for frozen bars.

Kitchen Chemistry

Without added stabilizers or emulsifiers, the texture of frozen yogurt bars can become icy if there’s too much liquid. The lower water content of Greek yogurt reduces the formation of large ice crystals, resulting in a creamier texture when frozen.

Full-fat Greek yogurt creates the smoothest frozen texture and helps the bars slice cleanly without crumbling. The bars will also hold their shape better when softened slightly, making it easier to enjoy without melting too quickly.

If you’re using a lower-fat or dairy-free version, adding a little cornstarch or gelatin can help improve stability and reduce any iciness, although it’s not essential. For extra super creamy bars, stir in a few tablespoons of cream cheese or coconut cream!

Flavor Variations to Try

Think of this recipe as a starting point – even keeping the granola base with frozen yogurt the same, there are endless possibilities when it comes to the toppings! Here are a few of our favorites:

  • Strawberry Chocolate Chip: Add chopped strawberries and mini chocolate chips on top.
  • Peach Crumble: Top with sliced peaches and a sprinkle of cinnamon sugar oat crumble.
  • Tropical: Use coconut yogurt, pineapple or mango chunks, and shredded coconut.
  • Peanut Butter Banana: Swirl peanut butter into the yogurt and top with banana slices.
  • Raspberry Swirl: Drop spoonfuls of raspberry jam over the yogurt and swirl before freezing.
  • Mocha Almond: Mix instant espresso powder into the yogurt and top with chocolate chips and almonds.
  • Cherry Vanilla: Use vanilla yogurt and top with halved cherries and white chocolate chips.
  • Apple Cinnamon: Add cinnamon to yogurt, top with finely diced apples and granola crumble.
  • Lemon Blueberry: Stir lemon zest into the yogurt and add blueberries and a light drizzle of honey.

Tips and Tricks for the Best Frozen Yogurt Bars

  1. Use Parchment Paper: Lining the pan with parchment paper makes it easy to lift the bars out of the pan once frozen.
  2. Pack the Granola Firmly: Press down hard on the granola layer so it doesn’t crumble when sliced.
  3. Avoid Overloading with Toppings: Too much fresh fruit on top can cause cracking when slicing.
  4. Make Them Extra Creamy: For a creamier texture with no icy crystals, add a few tablespoons of cream cheese or coconut cream or an additional 2-3 tablespoons of honey or maple syrup.
  5. Use a Warm Knife: Run your knife under hot water for clean slices.
  6. Storage: Store the bars in a sealed container to avoid freezer bars. Bars are best consumed within a few weeks to prevent iciness.

Frozen Yogurt Bars

Yield: 12 bars
Prep Time: 20 minutes
Chilling Time: 4 hours
Total Time: 4 hours 20 minutes

Homemade Frozen Yogurt Bars are built on a chewy granola base, topped with creamy vanilla Greek yogurt, and finished with juicy blueberries.

Ingredients

  • 2 1/2 cups (283 grams) granola
  • 6 tablespoons (85 grams) melted butter or melted coconut oil
  • 2 cups (227 grams) plain or flavored Greek yogurt
  • 2-3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup (160 grams) blueberries
  • 2 tablespoons peanut butter, slightly warmed

Instructions

  1. Mix the granola with the melted coconut oil or butter in a small bowl. Firmly press the mixture into a parchment-lined 9x13-inch baking dish.
  2. Stir together the Greek yogurt, honey or maple syrup, and vanilla extract (if using). Taste and adjust the sweetness if needed, keeping in mind that the frozen bars will not taste as sweet.
  3. Spread the yogurt mixture evenly over the granola crust. Scatter the berries and any optional toppings over the top, pressing them slightly into the yogurt.
  4. Cover and freeze for 4-6 hours, until completly firm.
  5. Remove the bars and parchment paper from the pan, then cut into bars or squares. Let sit at room temperature for a few minutes before serving to slightly soften.

Notes

  1. While tempting, don't overload the yogurt with too much fresh fruit - it will cause the bars to crack while cutting.
  2. If the frozen Greek yogurt is icier than you prefer, add a few tablespoons of cream cheese or coconut cream to the yogurt mixture.
  3. To cut the bars cleanly, dip a knife in hot water before each slice.
  4. See the post text for a full list of flavor ideas, but other delicious topping pairings include: chopped strawberries with mini chocolate chips, sliced peaches with cinnamon sugar, pineapple or mango with shredded coconut, peanut butter and banana slices, or jam or Nutella swirled into the yogurt.
  5. Store the bars in a sealed container to avoid freezer bars. Bars are best consumed within a few weeks to prevent iciness.
  6. Recommended Tools: 9×13-inch Pan | Parchment Paper | Mixing Bowls | Chef Knife
