Best Vanilla Sheet Cake
This classic Vanilla Sheet Cake is soft, buttery, and reliably crowd-pleasing, with a fluffy crumb and a smooth vanilla frosting that spreads like a dream. Baked in a 9×13-inch pan, it’s the kind of everyday cake that works just as well for birthdays as it does for low-key celebrations or “just because” baking.

I have a lot of cake recipes on this site, but a really good vanilla sheet cake needs a permanent spot in your rotation, which is why we’re ending my 2025 Sheet Cake of the Year series with this one. This is the cake I make when I need something dependable, familiar, and flexible.
- Bakes evenly in a standard 9×13-inch pan with no doming or sinking
- Uses sour cream and buttermilk for a soft, tender crumb
- Neutral vanilla flavor that pairs with almost any topping
- Easy to frost and slice cleanly for serving
- Stays moist for days without tasting dense

I’ve tested this version dozens of times over the years because vanilla cakes are deceptively tricky. Without chocolate or fruit to hide behind, every detail matters: fat for richness, acidity for tenderness, and just enough structure so it doesn’t collapse or dry out. This final version uses both sour cream and buttermilk, which might sound redundant, but they play slightly different roles here.
This cake also scales beautifully. It bakes evenly, cools quickly, and doesn’t require fancy assembly. You can frost it right in the pan, transport it easily, and decorate it however you want. Sprinkles, berries, chocolate shavings, or nothing at all. It holds its own.
Ingredients and Substitutions
Pictured below is what you’ll need to make this Vanilla Sheet Cake, along with some key ingredient notes and substitutions.

- Butter: For a dairy-free cake, use plant-based stick-style butter, not a tub spread.
- Egg: For an egg-free cake, use a liquid egg replacer designed for baking or 1/4 cup unsweetened applesauce per egg, knowing the texture will be slightly softer.
- Sour Cream: Use full-fat sour cream for the best texture and flavor. Full-fat Greek yogurt will work as a substitute.
- Vanilla Extract: For an upgrade, use vanilla bean paste. The flecks of vanilla beans are a gorgeous addition to a plain vanilla cake.
- All-Purpose Flour: For a gluten-free vanilla sheet cake, use 1:1 gluten-free baking blend with xanthan gum.
- Buttermilk: If you don’t have buttermilk on hand, mix whole milk with a teaspoon of lemon juice or vinegar and let it sit for 5 minutes.
How to Make Vanilla Sheet Cake
- Cream Butter and Sugar: Beat the butter and sugar together until light and fluffy.
- Add Eggs and Sour Cream: Mix in the eggs one at a time, followed by the sour cream and vanilla extract.

- Combine Dry Ingredients: Whisk flour, leaveners, and salt to evenly distribute.
- Alternate Additions: Mix in dry ingredients and buttermilk in stages to avoid overworking the batter.

- Bake: Spread the batter evenly in a 9×13-inch pan and bake until the center is set and springs back lightly. Cool the cake completely.

- Make the Frosting: Beat butter until pale, then add sugar, cream, and vanilla until smooth.
- Frost and Decorate: Spread the frosting generously over the cooled cake and decorate with sprinkles, shaved chocolate, or fresh fruit.

Secrets for Soft Cake
Vanilla cakes can easily turn dry or tough, especially in large pans where overbaking is a risk. One of the biggest safeguards against this is acidity, which is why this recipe uses both sour cream and buttermilk.
Kitchen Chemistry
Acidic ingredients like sour cream and buttermilk weaken gluten formation by lowering the pH of the batter, limiting how tightly proteins bond during mixing and baking. This results in a softer, more tender crumb without making the cake fragile.
In practical terms, this means the cake stays fluffy instead of chewy, even after it cools. The acidity also activates the baking soda, giving the cake a gentle lift that keeps it light but stable.
That balance is what makes this cake so reliable. It slices cleanly, holds frosting well, and stays moist for days, all without relying on oil or extra sugar to do the heavy lifting.

Tips and Tricks for the Best Vanilla Sheet Cake
- Room Temperature Ingredients: This helps the batter emulsify properly and bake evenly.
- Cream Thoroughly: Creaming the butter and sugar helps set the structure of the cake. Don’t rush this step!
- Don’t Overbake: Pull the cake when the center is just set to avoid drying out the cake.
- Storage: Keep the cake covered at room temperature for up to 3 days, refrigerated for up to 5 days, or freeze for up to 2 months. Bring the cake to room temperature before serving.

Vanilla Sheet Cake
This soft and buttery Vanilla Sheet Cake bakes up perfectly in a 9×13 pan and is finished with classic vanilla buttercream, making it an easy crowd-pleasing cake for any occasion.
Ingredients
For the Cake:
- 1 1/4 cup (283 grams) unsalted butter, room temperature
- 2 cups (396 grams) granulated sugar
- 4 large eggs, room temperature
- 1/2 cup (99 grams) full-fat sour cream, room temperature
- 2 teaspoons vanilla extract or vanilla bean paste
- 3 1/4 cups (390 grams) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (227 grams) buttermilk milk, room temperature
For the Frosting:
- 1 cup (226 grams) unsalted butter, room temperature
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 4 cups (454 grams) confectioners' sugar
- 4 tablespoons heavy cream
Instructions
- Preheat the oven to 350°F. Line a 9 x 13-inch baking dish with parchment paper and grease.
- Make the Cake: Cream the butter and sugar using an electric mixer until light and fluffy, 4 to 5 minutes. Add the eggs, one at a time, mixing after each addition. Beat in the sour cream and vanilla extract, scraping down the sides of the bowl.
- Whisk together the flour, baking powder, baking soda, and salt. Add one-third of this mixture to the batter and gently mix. Add half of the milk and mix again to combine. Repeat with one-third of the dry ingredients, the rest of the milk, and finish with the remaining flour mixture, beating in until just combined and no dry streaks of flour remain.
- Bake the Cake: Transfer the batter to the prepared pan and bake for 32 to 36 minutes, until the top is golden brown and a tester inserted into the center comes out with no wet batter. Transfer the cake to a wire rack and cool completely.
- Make the Frosting: Using an electric mixer, beat the butter until soft, pale yellow in color, and creamy, 3 to 4 minutes. Add the vanilla extract and salt and mix to combine. With the mixer running on low speed, add the confectioners' sugar, half a cup at a time, until completely combined. Slowly add the heavy cream, then increase the mixer speed to high and beat for 30 seconds. If the frosting is too thin, add more confectioners' sugar. If the frosting is too thick, thin with a little more heavy cream to achieve the desired texture.
- Decorate the Cake: Spread the frosting over the completely cooled cake and decorate with swirls of additional frosting and/or sprinkles, as desired.
